These mondo muffins will fill you up.  Share with a friend if you wish….or don’t.  A slab of butter might get borderline illegal…just find a quiet spot to savor.

Its a good thing I have this recipe memorized because the sad looking recipe card with my mother’s handwriting has seen better days.  Some directions have even faded beyond recognition.  But that’s ok.  It’s in my heart.  It was the first gluten free baked recipe I attempted after our Little’s diagnosis.  It took some doing, but we got it down.  I actually cried when I did get it right.  Because this was the moment I knew we could be normal again….even though my baking world became anything but.

Of course the trick is really ripe bananas, magic, and lots and lots of love.  There is almost no comfort foods that beats a fresh-out-of-the-oven banana bread muffin.  Add a dollup of butter and let it melt over the top?….stop…..just stop…come to Mama.

Bananas, gf cake flour [rice flour, potato, AF fiber blend (plant fiber), tapioca flour], sugar, butter [cream, (milk), natural flavor], egg, buttermilk [cultured lowfat milk, sodium citrate, salt, vitamin A palmitate, vitamin D3], baking soda
