“Bikini” Zucchini Bread Loaf

1 loaf feeds 8-12…slice that baby up however thick you’d like.

Wait, why Bikini?  (because it’s so good you just gotta have 2 pieces!) 😉  Plus…vegetables.  So it IS healthy(-ish.)

Who’d a thunk zucchini could add such depth to baked goods?  But you know it does.  And it’s flavor is mild enough that all it leaves behind is a subtle sweet addition to an already yummy base.  Cinnamon and sugar really power these bad boys up for some down home, give-me-another-one-please, addictive properties.  Just sayin.’  Along with the Banana Bread…this formula in my little black book of family recipes is worn and blotted out by splotches of dried ingredients.  Shrill sounds of joy escape my husband and children when they smell me baking these up.  Your turn!


Sugar, gf cake flour [rice flour, potato, AF fiber blend (plant fiber), tapioca flour], zucchini, canola oil, egg, pure vanilla extract [vanilla bean extractives in water, and alcohol], cinnamon, salt, baking soda, baking powder [corn starch, sodium bicarbonate, sodium aluminum sulfate, monocalcium phosphate], grape seed oil
